MISO Miso is a smooth, dark puree made from either beans or grain or a combination of both. Typically miso is made from soybeans, barley or rice and sea salt which has aged over a period of several months or years. The ingredients are first cooked and then inoculated with koji, a special mold that promotes the fermentation process. The mixture is placed in wooden barrels and allowed to sit for a year or more, similar to making wine. Miso has a salty, sweet taste and is very delicious. Miso is used in making soups, aging pickles, preparing sauces and spread and for occasional seasonings in place of sea salt in cooking.
